Chipotle Mexican Grill Inc. said Thursday that it’s conducting a limited-time test on Mexican cauliflower rice at 60 restaurants in Arizona, Southern California, and Wisconsin. Chipotle tested cauliflower rice in 2020, and had cilantro-lime cauliflower rice on the menu last January. Chipotle says cilantro-lime cauliflower rice gave sales a boost and drew new customers, with one in five cilantro-lime cauliflower rice orders coming from diners trying Chipotle for the first time. The latest test adds spices like cumin, salt and paprika, and is in line with keto, paleo, vegetarian and vegan diets. Chipotle stock is up 4.6% in Thursday premarket trading, and is down 27.6% for the year to date.
